ROASTY TOASTY POTATOES

Calling this “Roasty Toasty Potatoes” will totally fuck up my SEO. So worth it.

Food blogging is back on Skinny Belle!!! My recipes took a bit of a hiatus there, but I KNOW you guys missed me posting 20 photos of the same dish and rambling on about how it is ah-mazinggggg for way longer than is probably socially acceptable. But alas, I am back with more recipes for ya’ll and I will do my best to control ramblings and excessive photos. (Key word: do my best.)

Ok so these potatoes, are the potatoes of all potatoes. Well the roast variety, that is. Also I like to call potatoes potates, I think it suites them better.? So anywho, these potates are crispy AF and are as close as you can get to perfection with your classic roast potato.

We need to talk about the ketchup. I LOVE ketchup with certain foods and the world just needs to accept it. I am also not talking about hipster “organic house-made tomato ketchup” (vomit) that gets served at basically every brunch place. Can we all just admit that none of us are above Heinz? Because we are not. And it is the best. So yes, if you are hood like me dip these Roasty Toasty Potatoes in as much real ketchup as your little heart desires.

Here’s what you need to make these babies:

  • Red potatoes (any kind work really, I like the red ones for this)
  • 5 cloves garlic whole
  • 2 tbsp or so of dried parsley
  • White onion sliced into 1 inch slices
  • 5 tbsp extra virgin olive oil
  • Fine ground sea salt
  • Fresh cracked pepper

Directions:

Step 1

Preheat oven to 425 degrees F. Once it has been heating for a bit, put 4 tbsp of EVOO in your pan WITH RIMS (you will have a nasty ass grease fire in your oven if the pan doesn’t have rims). Heat the pan up by itself in the oven for about 8 minutes. Watch it carefully, because if it starts to smoke it is too hot! **This is a key step to making these Roasty Toasty Potatoes extraaaaa crispy. Which makes them like fries ?, which makes them great. So heat that pan ladies.

Step 2

Chop up your potatoes into large chunks and throw them in a large bowl with your garlic cloves, parsley, inion, 1 tbsp EVOO, and salt + pepper. Once the pan is hot, immediately transfer the potatoes to the pan and put back in the oven right away.

Step 3

Bake them for 20 – 25 mins AND DO NOT TOUCH. They must stay as-is to get crispy and delicious. So resist the temptation to move them and just let them be. After about 20 mins, take them out and flip them over making sure the potatoes are changing edges on the pan. Bake for another 15 – 20 mins.

Step 4

Salt and pepper more to taste (I have a heavy hand with the salt) andd….. ENJOY!!! ?

Is it too much to ask to just be John Lennon? ? Loving the vibes in this series shot by Aneta Michniak. This is the second set that we did together on this day.

Busiest week ever this week, lots of great projects in the works that I can’t wait to share with you guys. Was so tired tonight couldn’t be bothered to make an actual dinner so I ate Mr. Noodles ? So shameful/ratchet to admit… but I legitimately love eating Mr. Noodles LOL. I guess I just have a very “diverse” taste in food haha. Oh well, gotta do you. And if that happens to be a Mr. Noodles once and a while, so be it. It’s all about balance. 

Early morning tomorrow to do a workout with my trainer at 7 am ?. It’s always hard to get up at that time but when I do I feel so much more energized throughout the day. Worth the wakeup for sure! Will put some of my workout on Instagram, so make sure you are following along! @robynkimb

Bodysuit: Out From Under So Over It / Jeans: BDG

Okay so these jeans? Obsessed. I have been wearing them legitimately every single day and I will not stop. They are one of the few pairs I’ve found that actually fit my bum (shocking, I know) AND don’t gape at the waist. Does anyone else have that problem too? Where jeans are just tight in all the wrong places? It sucks. Far more than it sounds lol. Anyways ladies if you are shaped like me…. which is…. larger around the hip region *ahem* then you should pick these up too. They are my new go-to summer jeans for sure.

Love these photos shot with Rishad from Stay and Wander the other day. Went out to Buntzen Lake and it was gorrrrgeous! If you haven’t been before, go.

Having talented friends, it’s a thing of beauty. Did a fun little series with Aneta Michniak the other day. I am in love with this shoot because it totally channels John Lennon, and everybody knows the Beatles are where it’s at. Well, everyone who knows what’s good knows that. ?

Seriously feel like I missed out on one of the best eras. Back in the day, everything was badass. Rock and Roll, bad AF. Having weird bowl-cut hair, bad AF. Now you basically have to do something that will put you in jail for 20 years before anyone blinks an eye. ? I blame the internet.

Well, this is going to be my uniform for the summer. That is for damn sure. I love wearing little playsuits, they are so simple and so fun to wear. The process of putting an outfit together is significantly shorter, and you are out the door enjoying the sunshine that much sooner. Needless to say, if you don’t have a strong playsuit game this summer… get one. ?
