A much needed weekend in the sun 🙂

What a weekend! Could not have been happier to spend my weekend in sunny LA. It literally has been WEEKS since I have seen the sun here in Vancouver, so it was a much needed change of scenery.

The weekend started off with an AMAZING brunch at Blu Jam Cafe. Yes, the caps-lock was necessary. It is that good. I go to Blu Jam pretty much every time I am in LA because it’s so good. What to order if you are in town? My top picks are the Chilaquiles, Migas, French Toast (to-die-for), and the Blu Jam Benedict. Do it, you won’t regret it. ? I’m starving now just thinking about this again haha.

In the evening we went to The Bungalow which was totally up my kind of spot. It is designed like, well… like a bungalow. Super chill vibe, totally loved it. Recommend checking it out if you are ever in the LA area. 🙂 The night finished off with some food and drinks at The Nice Guy for some food + drinks.

Seriously so nice to get out of town for a little bit, and enjoy the beautiful California sun. Fully intend on living in there at some point in my life, I just love it so much. I could be one of those California surfer girls who is all tan and exotic. Lol except I am a ginger so that is just not happening. The tan part, that is. #realtalk

Anyways back to the reality of rain and cold in Van. But, to be honest, not that sad about it. The rain has a way of making you feel cozy at this time of year. (Disclaimer: I am probably just saying this because I spent my weekend in the sun lol.)

Creamy, rich, almost too good to be true.

Don’t get me wrong, I love to cook, but my god wouldn’t it be nice to have one of those fancy live-in chefs to make me this every morning. Be that person who wakes up and is like “sir, could you please whip me up those delectable parmesan eggs?” Obviously said in a thick British accent. Because, duh.

Anyways it would be SO GOOD to have someone there to cook you food when things get really busy. But for now, I give you another amazing simple recipe that is literally so packed with flavour I thought I was going to have a heart attack while consuming it. Or maybe that was the copious amounts of cheese…. either way. Delicious nonetheless.

This recipe is another one I have tried from Chrissy Teigen’s cookbook: Cravings. I have to say, really miss that girl’s blog. Back in the day (before she was super famous) her blog was the BEST. So honest, vulgar, and just generally amazing. Don’t get me wrong, her cookbook is great too and I love the recipes (hence the second feature on my blog), but it is missing that little bit of spunk that she had in her blog writing. Ok it was a lot of spunk, and a lot of f-bombs. But it was great. So Chrissy if you are reading this, come back to us!! 😛

Ok ok enough rambling. Recipe time. **This recipe is not straight from Chrissy’s book, I modified it 🙂

Here we go.

Ingreds:

  • 1 cup finely grated Parmigiano-Reggiano cheese
  • 1/2 cup heavy cream
  • 1 tsp finely chopped parsley
  • 1/2 tsp fine ground sea salt
  • 1/2 tsp fresh ground black pepper + more to taste
  • 2 tbsp butter
  • 4 eggs

Step 1: In a medium bowl, whisk together parm, cream, parsley, salt, and pepper. 

Step 2: Either use two 6-inch skillets or one large skillet, and heat 1-2 tablespoons of butter over medium heat. Add the cream mixture and let it bubble all the way through for about 1 – 2 minutes.

Step 3: Crack your eggs in the pan and let them cook until the egg whites are set and the yolks still runny (uhgggg, can you say #foodporn?) This should take 2 – 3 mins.

Step 4: Season that mouth-watering pan with more salt, pepper, and parmesan and grab a french baguette and DIG IN. Don’t bother taking this out of the pan, because, flavour. 

Anywho, this is what is happening in my kitchen this morning? Come over and help me clean up? Please? Someone? ? I am legit the worst for this, love to do all the creating and mess making, but not the cleaning up. Maybe I should trade that imaginary chef in for a real-life cleaner. This could be a much better plan. Hmmmm….

Fall is such a short time period here in British Columbia, but when the leaves start changing and turn all yellow, orange, and red I just can’t get enough. Legit walked around all weekend saying “look look! It’s so beauuuuutiful.” Enjoying this gorgeous weather while it lasts! Because soon, it will be just rain, rain, and more rain. Bleh.

Outfit is all from Free People, I was feeling like being super comfy this weekend so an oversized knit was definitely my top choice. Shoes I got from Vans, and I am totally feeling the sneakers vibe these days! Casual but cute, love it.

Andddddd I’m back with the black-on-black. Except this time I went crazy and added a splash of red with this little neck tie (just wild.) Which for the record — I am obsessed with these days. I have been wearing neck ties basically every day, and am beginning to think I have some sort of problem. They just make every outfit look so damn cute! Cant help myself.?

Other things I am all about this fall? Oversized coats and sweaters. We are talking WAY oversized here. So you can expect to see a lot more of that too.

PROSCIUTTO CRISPS

Quick, easy, and looks fancy. ?

Seriously though. These are so easy and your friends will think you are a big fancy chef because you stacked some stuff on a small piece of toast. If we are being real that is what this “recipe” is. Hehe (insert devil emoji.)

Anyways, if you want to be full of trickery like me and pretend to be fancy, here is what you need to make these delicious little appetizer bites.

  • Baguette, cut into thin slices and LIGHTLY toasted
  • Prune spread (available at Whole Foods)
  • Thin slice of asiago cheese
  • Prosciutto
  • Thin green onions

Uhg so good. If I am being totally honest here, I just made these and ate them all by myself. Because, #blogging. ? My suggestion is you do the same, because they might just be too good to share.
